Zucchini soup can turn watery and flat fast — this one doesn't, because of what's doing the work underneath. Potato gives the broth real body, turning thin liquid into something velvety. Fresh basil cuts through that richness with a bright, grassy lift, so the soup never goes dull or one-note. That's the contrast that makes it work: soft and rich against sharp and green.
The olive oil is doing more than finishing the bowl. Poured in slowly while everything's still hot, it emulsifies right into the vegetables — no cream needed — and helps your body soak up the fat-soluble nutrients in the zucchini and basil along the way. It's also why a bowl like this keeps you satisfied instead of sending you hunting for a snack an hour later: good fat slows digestion and helps you feel full longer.
Serve it hot on a cool night or chilled on a hot afternoon — both work equally well once the flavors settle. On its own it's a light meal; add a poached egg or a piece of grilled white fish if you want more protein, or keep it simple with a thick slice of toasted sourdough for scooping.
Ingredients
- 600g Zucchini, sliced
- 200g Potatoes, peeled and cubed
- 1 liter Vegetable broth
- 30g Extra virgin olive oil
- 1 bunch Fresh basil leaves
- Salt and black pepper to taste
Method
- Put the cubed potatoes and sliced zucchini in a large pot and cover with the vegetable broth.
- Bring to a boil, then reduce the heat and simmer for about 20 minutes, until the potatoes are completely tender when pierced with a fork.
- Take the pot off the heat and stir the fresh basil leaves into the hot broth.
- Blend with an immersion blender, pouring the olive oil in a slow, steady stream as you go — this is what makes the soup thick and silky.
- Season with salt and a generous crack of black pepper.
- Serve warm or chilled, depending on the season.
