Whitebait Spaghetti

しらすとレモンのスパゲティ

This dish plays with contrast of the delicate, salty flavor of whitebait pulling against a bright, sharp hit of citrus. Swapping the usual splash of wine for lemon shifts the whole dish from mellow acidity to something more vibrant and sun-drenched. Red chili adds a steady, warming heat that cuts through the richness of the oil, so every bite stays interesting instead of flattening out.

The extra virgin olive oil is doing the real work here — it tames the lemon. Without its silky fat, the citrus would turn sharp and the chili aggressive; the oil rounds off both edges and pulls them into one cohesive sauce. It's a meal that leaves you feeling energized and light, giving you the kind of healthy fats that keep you full without the heaviness of a cream-based pasta.

This is a balanced main on its own — pasta, protein, and good fat all in the bowl. For a fuller Mediterranean spread, serve it with crusty sourdough on the side to mop up the spicy, lemon-soaked oil left in your bowl.

Ingredients

  • 200g Spaghetti or linguine
  • 100g Whitebait
  • 5 tbsp Extra virgin olive oil
  • 1 fresh red chili pepper, thinly sliced (seeds removed for less heat)
  • Zest and juice of 1 small organic lemon
  • A handful of fresh parsley, finely chopped
  • Sea salt to taste

Method

  1. Boil the water: Bring a large pot of salted water to a boil. Add the pasta and cook until just shy of al dente.
  1. Infuse the oil: In a wide skillet, heat the olive oil over low-medium heat. Add the sliced chili and let it sizzle gently for 2 minutes to infuse the oil with its warmth.
  1. Cook the fish: Increase the heat to medium and add the whitebait to the skillet. Stir gently for 1–2 minutes until it turns opaque.
  1. Brighten the base: Pour in the lemon juice. It will bubble and emulsify with the peppery oil into a thin, bright sauce.
  1. Toss the pasta: Drain the pasta, reserving a splash of cooking water, and add it to the skillet. Toss thoroughly so the oil and fish coat every strand — add a splash of pasta water if it looks dry.
  1. Finish: Turn off the heat and fold in the lemon zest and parsley. The residual heat releases the oils from the zest, making the dish smell incredibly grassy and fresh.
  1. Serve: Plate immediately with one final drizzle of raw EVOO.

We've omitted garlic to keep the flavors focused and clear. If you like it, it would typically be added in Step 2; simply sauté a smashed clove of garlic in the oil alongside the chili until golden, then remove it before adding the fish.
