This is summer in a bowl, and the oil is doing the balancing. The gazpacho base — watermelon, tomatoes, peppers, cucumber and a little stale bread, blended smooth — pits ripe sweetness against sharp acidity: watermelon on one side, tomato and cider vinegar on the other. A generous pour of olive oil in the blender is what keeps that vinegar from tasting harsh and the watermelon from tasting like straight juice. Chill it for at least thirty minutes before serving — it needs to be properly cold, or that balance falls flat.
The oil works differently in the tartare. Since the red snapper stays raw, tossing it in olive oil is as close as this fish gets to being cooked — it coats every cube, rounds out the lime's sharpness, and gives you the rich, seasoned bite you'd otherwise only get from heat. Skip it and the fish just tastes bare.
It's doing you a favor too. Red snapper brings clean, lean protein, and the fat in the olive oil helps you get more out of it — and out of the vitamin C in the tomatoes and peppers. That's the kind of pairing that keeps you satisfied through a warm evening instead of reaching for something an hour later.
A few slices of toasted sourdough on the side are all this needs to become a full meal — the bread is your carb, everything else is already on the plate.
Ingredients
- 400g Red Snapper fillet (sushi-grade/previously frozen)
- 520g Watermelon (rind removed)
- 250g Datterino or cherry tomatoes
- 230g Red bell pepper
- 150g Cucumber
- 60g Celery
- 70g Stale bread
- 3 tbsp Apple cider vinegar
- 4 tbsp Extra virgin olive oil (plus more for drizzling)
- Fresh basil leaves
- Lime zest
- Tabasco (optional)
- Salt and black pepper
Method
- Soak the bread: Place the stale bread in a bowl with the vinegar and a splash of water. Let it soften, then squeeze out the excess liquid.
- Blend the gazpacho: In a blender, combine the watermelon, tomatoes, peppers, cucumber, celery, and soaked bread. Add 2 tablespoons of olive oil, a few basil leaves, salt, pepper, and a dash of Tabasco if using. Set aside one tablespoon each of diced red pepper, cucumber and celery before blending.
- Strain and chill: Blend until completely smooth. For a silky texture, pass the mixture through a fine sieve into a bowl. Refrigerate for at least 30 minutes.
- Prep the fish: Dice the red snapper into small, even cubes. In a separate bowl, combine the fish with the reserved diced red pepper, cucumber and celery, 2 generous tablespoons of olive oil, salt, pepper, and fresh lime zest.
- Assemble: Pour the chilled gazpacho into shallow bowls. Spoon a neat mound of the red snapper tartare into the centre.
- Finish: Add a final crack of black pepper and a generous drizzle of olive oil before serving.
