Fresh Tomato Spaghetti
I make this dish when I want a quick, comforting meal without following a strict recipe. It relies entirely on the natural sweetness of summer cherry tomatoes breaking down into a fast, vibrant sauce right in the pan. The balance here is simple but perfect: the bright acidity of the tomatoes softens into a rich, luscious coating for the thick pasta.
Extra-virgin olive oil is the workhorse here. You start by using it to blister the tomatoes, where its grassy, peppery notes keep the sweetness of the fruit from tasting flat. Then, when you toss the pasta in at the end, the oil binds with the starchy pasta water to create a silky, rich sauce that coats every strand. More importantly, eating these cooked tomatoes with olive oil helps your body actually soak up their fat-soluble nutrients, like lycopene. The combination of these healthy fats and the wholesome carbs from the pasta keeps you full and satisfied.
Because this dish is a carb-heavy, flavor-packed bowl, it makes a great standalone main. To round it out into a fully balanced meal, I suggest serving it alongside a simple piece of grilled chicken, white fish, or a scoop of fresh ricotta cheese for added protein.
Ingredients
- 200 g spaghetti (thickest as possible, 2.2mm would be perfect)
- 250 g cherry tomatoes, halved if large
- 45 ml extra-virgin olive oil
- Red chili flakes (optional, to taste)
- Reserved pasta water
- Fresh basil (optional)
- Salt to taste
Method
- Pour the extra-virgin olive oil into a cold skillet. Add the cherry tomatoes and a pinch of chili flakes if you want some heat.
- Bring the pan to medium heat and immediately cover it with a lid. Let the tomatoes blister and soften for about 4 to 5 minutes.
- Remove the lid and press down on the tomatoes with the back of a spoon to release their juices. Turn the heat down to medium-low and let the juices mingle with the oil to form a light sauce.
- Meanwhile, bring a pot of salted water to a boil. Add the spaghetti and cook until it is 2 minutes shy of al dente.
- Right before draining, scoop out a mug of the starchy pasta water and set it aside. Drain the pasta and drop it directly into the skillet with the tomatoes.
- Turn the heat to high. Pour in a splash of the reserved pasta water and toss the spaghetti vigorously. Let the oil and water bind together until the sauce looks creamy and silky.
- Remove from the heat, season with salt, and toss in the fresh basil before serving.
