Salmon with Lemon-Herb Olive Oil Sauce

Pan-searing salmon gives you a crisp crust, but a heavy piece of fish needs bright flavors to balance it out. A quick, vibrant sauce made of extra virgin olive oil, fresh lemon, dill, and parsley brings everything together. The sharp, acidic lemon cuts through the richness of the fish, while the silky olive oil softens the lemon's bite and carries the fresh, grassy notes of the herbs straight to your palate.

Eating fish this way makes a lot of practical sense for your body. The healthy fats in the salmon and the extra virgin olive oil work together to help you absorb the fat-soluble vitamins found in the herbs and the fish itself. This combination of dense protein and quality fat provides sustained energy, keeping you full, satisfied, and focused for hours.

Because this is a hearty, fat- and protein-rich main course, you need a good carbohydrate to soak up that peppery olive oil sauce. Serve this with steamed new potatoes, boiled quinoa, or a thick slice of crusty sourdough bread to make it a completely balanced meal.

Ingredients

340 grams salmon fillets (2 center-cut pieces of 170 grams each)

60 ml extra virgin olive oil, divided (15 ml for cooking, 45 ml for the sauce)

5 grams fresh dill, finely chopped

5 grams fresh flat-leaf parsley, finely chopped

1 organic lemon (half juiced, half sliced into wedges for serving)

Sea salt and coarsely cracked black pepper, to taste

Method

Season the salmon fillets generously on both sides with sea salt and black pepper. Let them rest at room temperature for 10 minutes to take the chill off.

Whisk 45 ml of the extra virgin olive oil, the chopped dill, the chopped parsley, and the fresh lemon juice in a small bowl to create the sauce. Season with a pinch of salt and pepper.

Heat the remaining 15 ml of extra virgin olive oil in a skillet over medium-high heat until it shimmers.

Sear the salmon for 3 to 4 minutes per side. The oil prevents sticking and helps form a crisp, golden crust while leaving the center tender and just opaque.

Transfer the salmon to plates. Spoon the herbed olive oil sauce generously over the top so the warm fish can immediately absorb the bright flavors. Serve with a lemon wedge.

We’ve omitted garlic and/or onion to keep the flavors focused and clear. If you like it, it would typically be added in Step 2, finely minced and whisked directly into the raw olive oil sauce.
