Persimmon Panzanella with Rosemary Olive Oil Croutons
Persimmon Panzanella brings an autumn twist to the classic Italian bread salad. Sweet, ripe persimmons replace summer tomatoes, creating a combination of juicy fruit, crisp rosemary croutons, and fresh, peppery rucola. The contrast between soft fruit and crunchy bread makes this simple salad particularly satisfying.
A red wine vinegar and lemon dressing balances the natural sweetness of the persimmons with bright acidity. We keep the dressing light enough to preserve the fruit's delicate flavor while allowing the toasted bread to absorb the juices without becoming too soft.
Extra virgin olive oil brings everything together. It gives the rosemary croutons their golden, crisp exterior, creates a smooth dressing that coats the ingredients, and adds a fresh, fruity finish when drizzled over the salad just before serving.
Serve as a seasonal starter or side dish alongside grilled chicken, roasted fish, or white beans for a more complete meal.
Ingredients (Serves 2)
For the salad
- 2 ripe Hachiya persimmons (approximately 300 g edible flesh)
- 100 g rustic Italian bread, torn into bite-sized pieces
- 25 g fresh rucola
- 1 sprig fresh rosemary
- 30 ml extra virgin olive oil, for the croutons
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
For the dressing
- 15 ml vinegar
- 15 ml extra virgin olive oil
- 5 ml freshly squeezed lemon juice
- Salt and freshly ground black pepper, to taste
To finish
- 10 ml extra virgin olive oil
Method
1. Prepare the persimmons.
Make sure the Hachiya persimmons are fully ripe and soft, as unripe Hachiya fruit can be very astringent. Carefully remove the tops and peel the fruit. Cut into wedges or large pieces, keeping them intact as much as possible.
2. Make the rosemary croutons.
Heat 30 ml extra virgin olive oil in a large frying pan over medium heat. Add the rosemary sprig and let it gently infuse the oil for about 1 minute. Add the torn bread and cook for 5–7 minutes, turning frequently, until golden and crisp. Remove the rosemary, season the croutons with salt and black pepper, and set aside.
3. Prepare the dressing.
In a small bowl, whisk together the vinegar, lemon juice, and 15 ml extra virgin olive oil until combined. Season lightly with salt and black pepper.
4. Assemble the salad.
Place the persimmon pieces and rosemary croutons in a large bowl. Pour over the dressing and toss very gently to avoid breaking the fruit. Leave for 2–3 minutes so the bread absorbs some of the dressing and persimmon juices.
5. Add the rucola.
Just before serving, fold the fresh rucola into the salad, keeping the leaves light and fresh.
6. Finish and serve.
Divide between two plates or transfer to a serving bowl. Drizzle with the remaining 10 ml extra virgin olive oil, add a little flaky sea salt and freshly ground black pepper, and serve immediately.
