Goat Cheese & Avocado Toast
This is our favorite Sunday brunch. You have the crunch of well-toasted bread meeting the buttery, silkiness of mashed avocado and the creamy tang of goat cheese. It’s a simple assembly, but the flavors feel elevated because of the contrast between the earthiness of the fruit and the bright, sharp notes of the cheese.
Extra virgin olive oil is the essential glue here. While avocado has its own fats, a generous drizzle of EVOO adds a peppery finish and a luxurious mouthfeel that prevents the toast from feeling dry. More importantly, the healthy fats in the oil act as a carrier, helping you soak up the nutrients from the avocado so you feel fueled and full for longer.
This is a versatile staple. It’s substantial enough to stand alone as a light lunch, but it truly shines as a foundational meal when paired with the right additions.
Ingredients
- 4 slices crusty bread (sourdough or whole grain works best)
- 1 large ripe avocado
- 1/4 cup goat cheese, crumbled
- Extra virgin olive oil (for drizzling)
- Sea salt or black lava salt (to taste)
Method
- Toast the bread: Heat your slices until they are deep golden brown and firm enough to hold the weight of the toppings.
- Prep the avocado: Halve the avocado and remove the pit. Use a fork to smash the flesh directly in the skin or in a small bowl until it’s chunky but spreadable.
- Layer the flavors: Divide the smashed avocado evenly across the four slices of toast.
- Add the creaminess: Sprinkle the crumbled goat cheese over the avocado.
- The EVOO finish: Drizzle a healthy amount of extra virgin olive oil over each slice. The oil will pool slightly in the crevices of the cheese and avocado, rounding out the sharpness of the goat cheese.
- Season: Finish with a pinch of sea salt to make the grassy notes of the oil and avocado pop.
